Jolee's Smash Cake

So, maybe you say I got a little carried away. I can live with that. This was Jolee's smash cake. Yes, I must be out of my mind because I made a 2-tiered smash cake. I've wanted to do one that was 2-tiers for a while now, and Jolee seemed perfect for it!

Her cake was made to match her party decor (Hugs & Stitches), which looked like this:

In pictures, this cake looks a lot bigger than it really is, so I took a picture of it next to the first thing I could get my hands on so you can compare the size. Closest thing was my desk, so a stapler it was!

Woodland Fairy & Friends (Sawyer's 1st Birthday)

Sawyer's 1st birthday was a Woodland Fairy & Friends themed party. I set the cupcakes up like this just to get a shot before I packed them up for the party. They way Valerie had everything displayed at the party was much cuter, but I'm lame and forgot to get a picture. I also forgot to get a picture of the chocolated pretzels. Maybe when she posts her pictures I will be able to steal a few. :)

Sawyer's smash cake was a sugar-free & egg-free apple spice cake with sugar-free cream cheese icing. I will be completely honest with you, this icing was very difficult to work with. Because it doesn't contain any sugar at all, it basically defies all cake decorating rules. :) Knowing how difficult it would be to work with, I'm pretty pleased with the outcome, because I didn't think I would be able to get it even remotely smooth or get it to pipe to create any decorations at all.

Red velvet mini cupcakes with cream cheese icing. These were mushroom and moss cupcakes. I had quite a few questions about what the "moss" was made out of. :) Don't worry...it is completely edible.

A Healthier Alternative!

Introducing the Apple Spice Cake!

I've been researching a healthy recipe for baby's 1st birthday smash cakes for some time now. Carolyn called me a while back and asked if I could do Ashton's birthday cake, but for his smash cake, she wanted something that wasn't too sweet. Since then I've had more requests for healthy smash cakes for baby. After much research, I think I've found a winner!

This is an Apple Spice Cake. It contains no eggs and no sugar for you mamas that want a healthier alternative for your baby's first cake. It doesn't look like much, but didn't ice this cake because it was just a tester. It was not too sweet, but still tasty!

While this cake looks dark, it is not chocolate, but I can  make a sugar-free, egg-free chocolate version of this cake!
